Ingredients:
1/2 cup - Yellow Onions minced
1 cup frozen Peas and Carrots
2-3 Eggs - lightly whisk
Proteins of choice - Shrimp, Chicken, etc
1 - Chinese sausage thinly sliced (optional)
3 cups Rice - for best results use leftover cold cooked rice (Jasmine or Short Grain Rice)
Fried Rice Sauce
In a bowl add:
1 tsp Sugar
1/2 tsp Salt
1/2 tsp Chicken Bouillon Powder
1 tbsp Oyster Sauce
2 tbsp Soy Sauce
1/2 tsp Sesame Oil
Mix well then set aside
Steps:
1. In a large wok or pan on med-high heat
2. Drizzle in about 1 Tbsp of neutral oil
3. Add proteins, stir until cooked, remove and set aside
4. Add Chinese Sausage (if using) stir for a minute then add minced yellow onions, and stir for 30 seconds
5. Add frozen peas & carrots, stir for 30 seconds then push to the side
6. Add eggs, slowly stir to scramble then mix in with the peas & carrots
7. Add rice, and carefully separate the cold rice using a spatula if it’s in clumps. Stir for about 5 minutes or until the rice has softened
8. Add cooked Proteins back in, then slowly pour in the fried rice sauce
9. Stir until well combined
10. Garnished with chopped Green Scallions
11. Turn off the heat
