Ingredients:
1 lb - Sliced Beef (I used ribeye)
5-6 small or 3-4 large potatoes
1/2 Yellow Onion sliced
3 stalks Spring Onions - cut into 1/2 inch length
2 Tbsp Vegetable Oil
Beef Marinade:
1 Tbsp minced Garlic
1 Tbsp Soy Sauce
1 Tbsp Oyster Sauce
1/4 Tsp Dash of Black Pepper
Sauce:
2 Tbsp Soy Sauce
2 Tbsp Oyster Sauce
1/4 Tsp Sugar
1 Tbsp Sesame Oil
1 Tbsp Water
1/4 Tsp Cornstarch
Mix together, set aside
Thinly slice potatoes, add to a large bowl with room temp water to remove the starch
Rinse potatoes a few times, add to a large tray lined with a paper towel
Slice Beef, and marinate with the Beef Marinade listed above for at least 20 minutes
Heat a pan with oil to 350F temp to fry the potatoes until golden brown & crispy then set aside
In a large wok or pan on high heat:
Add 2 Tbsp Vegetable Oil
Once the oil is hot, add marinated Beef
Stir and cook for a few minutes or until it has a slight sear
Add Yellow Onion and Fried Potatoes
Stir the sauce bowl up before adding it in
Stir until everything is combined
Add Spring Onions, stir
Serve with hot Jasmine Rice
