Dumplings ingredients:
1/2 cup All Purpose Flour
4 Tbsp Unsalted Butter room temp
3/4 cup of Milk of choice
1/4 tsp baking powder
Pinch of salt
Note* double ingredients if you like more Dumplings in the soup
In a shallow dish or mixing bowl, add all the dumplings ingredients listed, and stir until combined
Flour the working surface, transfer the dough
Work the dough until it’s thoroughly combined & smooth
Roll the dough out to a desired thickness
Cut into a desired square shape
Place on a baking tray, sprinkle flour
Cover, set aside
Soup ingredients:
2 Stalks of Celery - chopped
1 Whole Onions - chopped
2 cups frozen\fresh Mixed Vegetable
2-3 Bay Leaves
1 Tbsp Parsley Flakes
1 Tsp - Thymes
4 Qt Water
1 Tbsp Neutral Oil
2 Tbsp Butter
Soup Seasoning:
2-3 Tbsp Chicken Bouillon
1 Tsp Sea Salt
2 Tsp Sugar
1/2 Tsp Black Pepper
Adjust to taste
In a medium size pot (5 Qt) on med-high heat
Add Oil & Butter
Onion, sauté for a couple of minutes
Celery & mixed Vegetables, sauté for a couple of minutes
Remove & set aside
Add Turkey Carcass & Water
Bring to a simmer, reducing heat to low
Cover with a lid, and let simmer for about one hour
Remove the lid & Turkey Carcass
Remove meat from bones if any before discarding the bones
Shred Turkey meat & use some leftover meat (about 3 cups)
To the soup add:
Bay Leaves, Thymes, & Parsley Flakes
Soup Seasoning
Sautéed Vegetables
Shredded Turkey Meat
Optional if you want to thicken soup:
Ladle & reserve 1/2 cup soup broth to cool then mix 1/4 cup Cornstarch to it
Slowly add in Dumplings, stir occasionally so it doesn’t stick together
Skim foam
Remove Bay Leaves
Add Cornstarch slurry to thicken the soup
Adjust seasoning as needed
