Ingredients:
1. Choose a firm tofu and make sure it’s dry. Cut it into cubes and coat it with tapioca flour.
2. Pan-fry your tofu cubes
3. In a wok or big pan, sauté crushed garlic in peanut oil. Add in around 5 tomatoes that you have cut into quarters.
4. Add in equal parts: fish sauce, soy sauce, cooking wine, and mirin; add a couple of pieces of rock sugar and sprinkle black pepper
5. Make sure to taste the tomato sauce as it’s simmering. Then when the tomatoes are medium soft, add in your fried tofu.
6. Let the tofu simmer in the tomato sauce for at least 15 minutes so that it’ll soak up the sauce. Season to your preference. I like to add chili garlic sauce for spiciness and more black pepper. I like to sprinkle fried shallots at the end.
7. Serve this tofu with a bowl of hot white rice. Hope you enjoy it!
