It’s so easy to make and comforting when you’re craving a warm bowl of soup to enjoy with a baguette 🥖🍲
Serve 4-6 person
Soup Ingredients:
Chicken of choice (Wings, Drumsticks, or Thighs) 1 - 2 pounds
Mixed Vegetables - 2 cups
Minced Shallots - 1 Tbsp
Minced Garlic - 1 Tbsp
Yellow Onion - 1/2 cup sliced
Neutral Oil - 3 Tbsp
Potatoes - 2 whole large diced
Water - 4 cups
Coconut Water - 1 cup
Tomato Paste - 4 Tbsp
All Purpose Flour - 3 Tbsp
Cornstarch slurry - Mix 2 Tbsp cold water + 2 Tbsp cornstarch, stir well to combine
Chicken marinate:
Shallot minced - 1 Tbsp
Garlic minced - 1 Tbsp
Chicken Bouillon - 1 Tbsp
Fish Sauce - 1 Tbsp
Sugar - 1 Tsp
Black Pepper 1/2 Tsp
Soup seasoning:
Chicken Bouillon - 4 Tsp
Fish Sauce - 2 Tbsp
Sugar - 1/2 Tbsp
Instructions:
Mix Chicken with the marinade seasoning listed above
Add All Purpose Flour to it, mix well set aside
Mince the Garlic & Shallots, set aside
Peel, largely dice the potatoes, rinse & set aside
In a medium size pot on med-high heat, add oil
Add chicken, brown both sides, remove & set aside
Add minced Garlic & Shallots, and sauté for 30-45 seconds or until a light golden brown
Add Chicken back in
Tomato Paste
Stir well
Water
Coconut Water
Mixed Vegetables of choice
Add the soup seasoning listed above
Skim foam
Bring to a simmer, turn the heat down to medium, and simmer for 15 minutes or until the chicken is cooked
Add cut potatoes
Simmer for another 10-15 minutes
Add Cornstarch slurry
Stir well
Sliced Yellow Onions
Adjust seasoning to taste
Serve hot with warm baguettes
Enjoy!
