Pork Filling - In a large bowl combine:
* 1/2 lb Ground pork
* 1/2 cup Clear Bean Thread Noodles - soak in hot water until soften then cut
* 1/2 cup Wood Ear Mushroom - soak in hot water until soften then minced
* 1/2 cup yellow onions minced
* 1/2 Tsp Chicken Bouillon Powder
* 1 Tsp Fish Sauce
* 1/2 Tsp Sugar
* 1/2 Tsp Salt
* 1/2 Tsp Black Pepper
Tofu Prep
Firm or Extra firm Tofu - (2) 16 oz pack
Cut Tofu into (6) Squares
With a knife gently make a square cut all the way through the Tofu
(Save the center Tofu for another dish or add it to this dish)
Stuff the Tofu with the Pork Filling
In a pan on medium heat, add enough cooking oil to cover the Tofu 1/4 of the way
Pan fry all sides of the stuffed Tofu about 2 minutes each or until it reaches a golden brown
Remove and set aside
Seasoning liquid
In a large mixing cup add:
* 3 cups warm water
* 3 Tsp Chicken Bouillon Powder
* 1 1/2 Tbsp Fish Sauce
* 1 1/2 Tsp Sugar
* 1/2 Salt
* 2 Tbsp Cornstarch
Stir well
Prep remaining ingredients:
2-3 Tomatoes chopped
2 - Tbsp minced Shallots
1 - Tbsp minced Garlic
Step:
Heat up a large pan on med high heat
Drizzle in a couple tablespoon of preferred cooking oil
Once oil is hot, add Shallots then the Garlic
Sauté for a minute
Add Tomato, stir for a couple of minutes
Dash of Annatto Powder\Oil or Paprika (optional)
Stir Seasoning liquid well before adding into the pan
Stir then add in the fried stuffed Tofu
Once simmer, turn heat to medium low
Let simmer for 3-4 minutes
Occasionally drizzle the sauce over the Tofu
Adjust seasoning if needed
Continue simmering for 2-3 minutes or until the sauce thickens
Garnish with chopped green Scallions & Cilantro
Enjoy with steamed Jasmine Rice! 🍚
