I chopped a cup of carrots and shredded a big potato.
I mixed the carrot and potato with a quarter cup of all purpose flour, a tablespoon of cornstarch, and 2 eggs.
Then, I fried the mixture using my crepe pan. Look how it turned out! I’m so happy with this easy and tasty potato pancake. Of course it’s not as crispy as ones that are deep fried.
